Stir-fry the sliced onion in the olive oil and lemon juice for 5 minutes.

Add the strips of chicken and cook for a further 5 minutes.

Stir in the watercress and cook for 1-2 minutes before adding the remaining ingredients except the pasta. Season to taste with salt and ground pepper.

Bring to a gentle simmer, stir in the cooked pasta, heat through and serve immediately garnished with sprigs of watercress.
