'Banoffee Pie'

Why not try this classic recipe with a vanilla twist, perfect for a special occasion?
A deliciously yummy pudding which children and adults can share using Glutafin all butter Shortbread biscuits. The simmering of the condensed milk part is best done by adults but children can enjoy bashing the biscuits to make crumbs!
Serve in thin slivers as it really is very rich.

 Ingredients

Base
- Can of condensed milk
- 110g/4 oz 10 Glutafin all butter Shortbread biscuits
- 50g/2oz Butter, melted
- 1 x 5ml tsp Really good vanilla extract (Madagascan origin is the ultimate)
Topping
- 150g/5oz Whipped double cream or Greek style yogurt
- 2 Medium size bananas sliced just before serving
- 25g/1oz Chocolate curls

 Method

Place condensed milk in a large pan of simmering water. Cover and simmer gently for 3 hours. Top saucepan up regularly with boiling water to stop it boiling dry.

Remove can from the saucepan and leave to reach room temperature.

Prepare biscuit flan. Place the all butter Shortbreads into a strong polythene bag and crush using a rolling pin to make fine crumbs. Pour in the melted butter and squeeze bag until combined.

Tip crumbs into a loose base 20cm/8" flan tin and push crumbs flat using the back of a metal spoon. Chill to set for 30 minutes.

Open cooled condensed milk and stir in the vanilla extract. Pour mix onto flan base and chill to set the filling.

Just before serving spoon over the whipped cream or Greek style yogurt, sliced banana and chocolate curls.
NOTE: Whilst the recipe is easy to make it requires a long simmering time in order to caramelise the condensed milk into a delicious rich toffee. This can be done the day before if required.
For a reduced fat version use light condensed milk, which is made using skimmed milk.
If you want to freeze, mark the flan with a sharp knife through to the biscuit base before freezing into 10 portions. Freeze without the Greek yogurt and banana. Cookies can be frozen at end of stage 4. Cook from frozen allowing an extra 5 minutes cooking time. Baked biscuits are not suitable for freezing.
